Anurag
Head Chef
Anurag grew up in the kitchens of Amritsar, learning to coax flavour from spice long before he learned to plate it. His career has taken him across the world — cooking in Dubai, Kuwait, Jersey and Australia — before he joined Anaya to write a single seasonal menu, one that treats British produce with the discipline of a Punjabi thali.
Every dish on the tasting menu passes through his hands each evening. Nothing leaves the pass that he has not tasted, and nothing arrives at the door that a grower has not grown for the house.

Restaurant Manager
With over two decades of experience in the Indian hospitality industry, Kawaljit brings a wealth of knowledge, leadership and genuine passion for exceptional service to Anaya.
Kawaljit began his hospitality career in 2002 at Khazana, associated with renowned chef Sanjeev Kapoor, where he developed a strong foundation in Indian cuisine and fine dining hospitality. He then continued his career in Scotland, working at Bombay Place from 2009 to 2011, followed by Taj Tandoori from 2011 to 2014, gaining valuable experience across different styles of Indian dining and hospitality.
In 2014, Kawaljit joined Itihaas in Birmingham, where he spent over a decade developing his expertise in restaurant operations, guest relations and team leadership. His extensive experience has given him a deep understanding of what makes a dining experience truly memorable — from attentive service and consistency to creating a warm and welcoming environment for every guest.
